How do I access/turn on Lesson Summaries?

Turn on Lesson Summaries from the Lessonspace dashboard (under Settings > Recordings) - after that, all recorded sessions will have a generated lesson summary. Note: Sessions will only be summarised if they are recorded, so make sure the Space you are having sessions in has recording enabled.
